The main difference between this Kershaw Vegetable Knife and our other two smaller paring knives is the vegetable knife’s straight edge and sheepsfoot-style downturned tip. It’s just right for tasks you’ll do against a cutting board, such as trimming the stems from green beans. The straight edge lets you make one efficient cut downward with no need to rock the knife to complete the cut. The edge makes complete contact with the board and your job is done. This is a terrific specialty knife to add to your block.
