2012 Kitchen Knife of the Year Available in Very Limited Quantities
In Japan, owning a kiritsuki is the sign of a master chef; it is an all-purpose kitchen knife and can be used like a gyuto or chef’s knife, yet because it is thinner from spine to edge, it makes a beautiful slicing knife as well; a skilled Japanese chef can do just about anything with a kiritsuki.
Yet the Shun Taiyo isn't just any kiritsuki. It was named the "2012 Kitchen Knife of the Year" at the 2012 Blade Show. Blade Show awards are prestigious industry awards and winners are decided by a vote of industry representatives, including Shun competitors. Receiving this award is a measure of the outstanding quality of the knife.
The name Taiyo means “sun” in Japanese and Shun named this very limited edition knife “Taiyo” for the sunrise-like rays that illuminate the blade surface of this spectacular knife. Shun aspired to the very highest level of quality on the Taiyo. Absolutely nothing was left undone on this superb knife.
The Taiyo's cutting core is SG2 stainless steel. This micro-carbide steel is very dense and pure so that it takes a very fine 16-degree edge (32 degrees comprehensive) and holds its edge for a long time. On each side of the cutting core, there are 80 interspersed layers of nickel silver and stainless steel. This beautiful cladding supports the core and enables Shun artisans to create the exceptional sunrise pattern on the blade.
The handle is a refined version of a traditional Japanese octagonal handle shape. The difference is that the handle begins to round as it nears the bolster, making for a very comfortable and secure grip. A nickel silver bolster, sub-bolster, and endcap are the final balancing touches on this extraordinary example of the art of find kitchen cutlery.
