Shun Ayu Update

Many of you have asked about the availability of the Shun Ayu, so we wanted to offer an update.

While we don’t have an exact date when they’ll be available and where, we can fill you in on how many are being made and the final MSRP.

Like all Shun cutlery, the Shun Ayu is meticulously handcrafted in Japan. As you may know, all Shun knives take at least 100 handcrafted steps to complete. Yet the Ayu’s complex handcrafting takes even more. In fact, over 160 individual steps go into the creation of each Ayu.

In many ways, the Ayu is more akin to a custom knife than a production one. For example, the blade pattern, which resembles the scales of the prized Japanese ayu (“sweetfish”), requires multiple forging operations. During this process, 71 micro layers of two high-carbon stainless steels are layered and roll-forged, then precisely manipulated to create the fish-scale pattern. The result is a high-performance Dual Core Damascus blade, but with an absolutely unique look.


This Limited Edition knife also features Shun’s proprietary Composite Blade Technology. For the Ayu, we use this technology on both blade tip and heel. This puts the toughness and cutting performance of high-carbon SKD11 steel in those high-impact areas. Each Ayu tip and heel require custom application of the brazing compound that permanently joins them. Both the SKD11 steel and the Dual Core Damascus must be custom processed and demand specialized heat treatment as well.

Every Ayu handle is hand cast. Made of ultra-high-durometer urethane, each handle is hand finished to a satin luster and inset with a handsome carbon fiber inlay. Finally, as are all Shuns, each Ayu is hand sharpened and hand finished.

With the increased complexity and near-custom processes needed to make each Ayu, you will not be surprised to learn that this is a very limited production. Just 100 of these incredible knives are being handcrafted. The MSRP is $2,250.
