The judges at Blade Show recently recognized the Shun Ayu with their 2017 Kitchen Knife of the Year Award.
In just 15 years, Shun has made a significant impact on the kitchen knife world. During that journey, our knives have often been recognized at Blade Show in Atlanta, Georgia. In 2017, Shun has done it again, for the 12th time.
This year, the 2017 Kitchen Knife of the Year Award went to the new Shun Ayu, which was created to celebrate the Shun brand’s 15th anniversary. This beautiful piece of Japanese craftsmanship was inspired by the ayu, or “sweetfish.” In Japan, the arrival of these fish marks the beginning of summer and remains one of the country’s cultural icons.
The Ayu is not just named for the Japanese fish; the blade design takes inspiration from the sweetfish. What’s more, the 71-layer Dual Core blade features a Damascus blade pattern based on the fish scales of the ayu. All aspects of the blade are handcrafted with premium materials. That includes blade tip and heel, which are made of SKD11 high-carbon, high-chromium steel.
Apart from the blade, the handle was carefully crafted to be beautiful, while also providing an excellent grip. Specifically, the ultra-high-durometer urethane handle fits the hand comfortably. For visual appeal, the handle sports a handsome carbon-fiber inlay and satin finish.
To top it all off, the handle includes a 8mm ruby crystal to celebrate Shun’s 15th anniversary. This crystal solidifies the Ayu as a crowning jewel in Shun innovation.
