Now Shun is proud to offer a limited release of this exquisite chef's knife. Once you see the beautiful flowing lines of the Dual Core blade steel, you'll understand why Shun named this style "Nagare," which means "flow," "a flowing stream," or a "current" in Japanese.
The Nagare's Damascus blade is made from two premium-quality, high-carbon stainless steels. Seventy-one alternating micro layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the Nagare's extremely sharp edge maintains its superior performance longer. Etched laminations in the blade reduce drag, helping food release from the blade and letting you glide through each cut quickly and easily.
The Nagare Chef's Knife offers full-tang construction for exceptional balance and strength. The charcoal PakkaWood handle is deeply contoured for a comfortable and secure grip, while the bolster is comfortably curved for an easy chef's grip. Polished rivets and a tapered endcap add to the sophisticated, luxurious look of this high-performance cutlery.
